A Yule log is a traditional dessert, a Christmas cake, served near Christmas, especially in Belgium, France, Switzerland, Canada, Lebanon, Syria, and several former French colonies such as Vietnam, as well as the United Kingdom and Spain.
Our interpretation on this classic Christmas cake is a modern version combining the French tradition and California flavors. This year our log cake is a caramel cake. It has a nice chewy calamel layer balanced with dark chocolate mousse, roasted cocoa nibs, soft almond sponge, sable cookie and rich caramel chantilly. The combination gives this pastry just the right amount of salt and caramel with the perfect mouthfeel.
